School Food System

You want to improve school meals? Then we recommend the SchoolFood4Change Menu, a step-by-step guide to healthier and more sustainable school meals. 

For more than four years, 43 partners in 12 European countries have worked together to innovate, develop, and test working methods and tools in real school and city environments. The aim has been to use school meals to affect and change food production and consumption on a large scale.   

HOW SCHOOL FOOD CAN DRIVE HEALTH, SUSTAINABILITY AND INCLUSION 

To make sure that children and youth growing up today get the opportunity to live long and healthy lives through sustainable and nutritious eating habits we have been working through the SchoolFood4Change Triple Approach.

To verify the effects of using this Triple Approach and show how policy can be influenced to improve the school food system in Europe and beyond, our menu contains a fourth ingredient, “Proof of Concept”, which provides scientific evidence and hightlights the need for policy change.

Whether you are a city representative or procurer, part of a kitchen team, working at a school as a teacher or principal, youth or a family member, a policymaker, representative of a civil society organisation or a catering service, you can find support for improving school meals in this guide.

How food culture and eating habits in schools can promote commitment to sustainable food and culinary traditions: By implementing a ‘Whole School Food Approach’ (WSFA), schools, can positively influence children’s eating habits and thus promote their long-term commitment to sustainable food and culinary traditions. The WSFA aims to establish food education as an integral part of everyday school life, shape a positive school food culture and at the same time give space to culinary traditions.

How school meals can be sustainable, healthy, tasty, more nutritious and in season. By training cooks and canteen staff to compile and prepare weekly menus and dishes that are tasty, fresh, nutritious and seasonal, the quality and sustainability of school meals can be improved. The impact of what is consumed at the schools’ premises and children’s health becomes measurable. Kitchen teams become more confident and creative in their work. 

How school meals can support sustainable agriculture, support small farmers and strengthen social inclusion: By purchasing school meal ingredients according to sustainability and social criteria, it is possible to protect biodiversity, support sustainable agriculture and organic farming—especially from smaller farms—and promote short supply chains, while also paying attention to seasonality and nutritional value without increasing costs. 

How scientific studies, impact assessment and the implementation of good practices can influence policy: Scholars from universities and research centres have been active partners in the project designing activities and following the effects in implementing cities. By drawing on research and proven experience, we have developed policy recommendations to influence policy at the local, regional and international levels.

About SchoolFood4Change

We aim at making school meals enjoyable and healthy for both our children and our planet. 

SchoolFood4Change is an EU-funded project, headed by ICLEI – Local Governments for Sustainability and co-created by a consortium of 43 European partners, including environmental and non-governmental organisations, local governments, scientists and research institutes, schools, chefs,  meal professionals and health experts. The well-being of both our young people and our planet is a responsibility we all share. Looking back, we are thankful for what has been done and achieved. Food, and school food in particular, is essential to grow, learn and thrive. School meals have always constituted a very welcome daily break for many pupils. That’s why we say: Thanks for the food! 

Nevertheless, food always evolves over time and school food is no different. SchoolFood4Change builds on what has been achieved, asking for more vegetables, lentils, nuts, diversity on our plates and more democracy, education and inclusion in our societies. SchoolFood4Change therefore supports change agents who are spreading a new food culture from the plates in school canteens to the plates in families, workplaces and all of society. It’s time for a new menu!
